Place your sourdough slices under the grill until they are perfectly crisp on the outside but still soft in the middle.
Melt a knob of butter in a frying pan over a gentle heat. Add the sliced leeks and cook until they are nice and soft.
Stir the chopped thyme into the pan then pour in a splash of double cream. Let the mixture bubble slightly.
Remove the pan from the heat. Stir in most of the grated cheddar cheese, leaving a small handful aside for later. Season with salt and pepper, mixing until the filling is deliciously creamy.
Spoon the creamy leek mixture evenly over the toasted sourdough slices. Sprinkle the remaining cheddar cheese over the top.
Pop the toasties back under the grill until the cheese is bubbling and golden brown. Serve hot.
