  • 1 leek, sliced
  • A small bunch of fresh thyme, finely chopped
  • Double cream
  • Grated cheddar cheese
  • A knob of butter
  • Salt and pepper to taste

Place your sourdough slices under the grill until they are perfectly crisp on the outside but still soft in the middle.

Melt a knob of butter in a frying pan over a gentle heat. Add the sliced leeks and cook until they are nice and soft.

Stir the chopped thyme into the pan then pour in a splash of double cream. Let the mixture bubble slightly.

Remove the pan from the heat. Stir in most of the grated cheddar cheese, leaving a small handful aside for later. Season with salt and pepper, mixing until the filling is deliciously creamy.
