
Craving a gourmet veggie burger? Pair salty grilled halloumi and sweet chilli with the perfect base: a soft, toasted Hovis premium burger bun.

Heat a ridged griddle pan or a non-stick frying pan over a medium-high heat.
Slice the burger bun in half. Place the halves cut-side down in the dry pan for 1 to 2 minutes until lightly toasted and golden brown, then set aside.
Lightly brush the halloumi slices and the cherry tomatoes with olive oil. Place them into the hot pan. Grill the halloumi for about 2 minutes on each side until a deep, golden brown crust with clear grill marks forms. Warm the tomatoes through at the same time, turning once.
Spread the mayonnaise or garlic aioli generously over the bottom half of the toasted bun. Top this with a small handful of fresh rocket leaves.
Arrange the warm roasted tomatoes over the rocket, then stack the two grilled halloumi slices directly on top of the tomatoes.
Drizzle the sweet chilli sauce over the top layer of halloumi cheese, allowing it to drip down the sides. Pop the top bun on, press down gently and serve immediately while the cheese is warm and squeaky.
